The format approach
Every Bengong's Tea venue runs a slightly different concept tuned to its catchment — Wonderland for the family mall traffic at Chatswood Westfield, Aqua for the corporate St Leonards crowd, Tea Lab for the dense Vietnamese-Australian market at Cabramatta, Black for late-night Darling Square diners.
This is the moat. Bubble tea is commoditised; format-tuned premium tea + bakery isn't.

Multi-format network
Six distinct concept formats — Wonderland, Tea Lab, Go, Black, Aqua, Tea & Bakery. Each tuned to its catchment. The format is the moat: a competitor opens the same generic bubble tea store every time; Bengong's matches the venue to the format.
Tea + bakery, not tea alone
The bakery vertical — celebration cakes, custom orders, dessert-cabinet sales — adds a second revenue stream that pure tea shops don't have. Higher average ticket, less time-of-day concentration, real margin in the dessert category.
Central production at Holroyd
Production kitchen at 8-10 Fox Street, Holroyd — supplies all seven Sydney stores. Franchisees inherit a working supply chain on day one, not a "you'll figure out your suppliers" handoff.
